Clams with Smoky Bacon & Tomatoes

Have I mentioned how much I adore Bon Appetit magazine? The February issue is full of amazing recipes that are honestly easy to make & not terribly expensive. I love shell fish- oysters being my favorite, but they are a little large to cook up in my kitchen. That is a family affair saved for Thanksgiving. Soooo I decided to hit up Harris Teeter when they had their fresh clams on sale for $4.99 per 16ct. bag. Everything else in this recipe, I had in my pantry, making it oh so easy to make for a normal weeknight meal. This could also work as a special occasion meal or as a first course for a dinner party.

I like dishes that make their first impression when you see them. Not just when you taste them. That is this dish. It looks like it should be carried out on a server's tray at an upscale restaurant. This meal cost about $12.00 to make and like I said, you should have most of the ingredients on hand already!

Ingredients:
-4 slices applewood-smoked bacon, cut into thin crosswise strips
-1 medium onion, chopped
-2 garlic cloves
-14 oz can of diced tomatoes
-roasted red bell peppers (from jar) (optional)
-32 littleneck clams, scrubbed (i believe this is 3 lbs)
-fresh Italian parsley

Directions:
-Heat medium to large pot over medium-high heat.
-Add bacon & onion - saute` until bacon is crispy & onion begins to brown. (appx 8 min)
-Add garlic and stir for 1 minute.
-Add tomatoes with juice & peppers if including them.
-Bring to boil & don't forget to scrape up the brown bits in the bottom of the pan! That's where the flavor is!
-Add clams, cover, and boil 8-10 minutes, stirring occasionally, or until clams open up. (any clams that do not open are bad! throw them away!)
-Stir in 1/4 cup parsley.


-Divide into shallow bowls and top with a bit more parsley.
