Grant & I love each other very much, but we aren't huge on the whole Valentine's day thing. Let's save that for the dating couples. So, no dinner out, no gifts, and no flowers. Not our scene. However, a restaurant worthy dinner & a decadent dessert? ABSOLUTELY! Plus, I'd rather cook up am awesome $10 dinner in the kitchen than blow $50 bucks at a packed restaurant with bad service. So, here it is, and believe it or not I made broccoli. If you know me, you know how much I despise this little green vegetable and cannot even stand the smell, but for my husband, I'll do anything.
Dinner?
Dill-Parmesan Crusted Salmon Fillets with Roasted Broccoli & CauliflowerIngredients for fish:
-1/2 cup mayonnaise
-1/4 cup Parmesan cheese
-1 tsp lime or lemon juice
-1 tbsp dill (fresh or dried)
-pepper
-paprika
Preheat oven to 350.
Spray baking dish with spray oil (or just butter it up).
Mix all ingredients in small bowl till blended. Spread over fish.
Bake for 15 minutes.
Ingredients for veggies:
-1 bag frozen broccoli
-1 bag frozen cauliflower
-some garlic (just eye it depending on how much you want)
-1/8 cup Parmesan cheese
-black pepper
-kosher salt
-EVOO
Thaw veggies in microwave safe bowl for 5 minutes.
After thawed (may still be cold, that's fine), mix in garlic, evoo, salt, pepper, and Parmesan cheese. Use your clean hands to mix...why get another spoon dirty?
Place on highest oven rack available- this ensures it browns, even at the lower temperature.
Roast for about 20-25 minutes while the fish is cooking.
Take the fish & veggies out of the oven, plate, and enjoy!
Dessert?:
Ingredients:
Chocolate Fondue
-1 cup semisweet chocolate chips
-1/2 cup white chocolate chips
-1 tsp vanilla extract
-1/4 cup heavy cream
Strawberries, bananas, apples, pineapple, pound cake, marshmallows, or whatever else you wanna dip!
Melt chips over a double boiler in the stove, add heavy cream & vanilla.
Mix till incorporated.
Pour into your fondue pot on a very low heat setting or low flame.
Enjoy!

We had our fondue on the coffee table in the living room & watched Netflix. Our version of "romantic". :)
