I know it's January and other than the snow getting me out of work for 2 days now, I don't care for this month. I don't like the cold outside, I don't like that my skin gets pale, and I am not a fan of wearing socks. In all, it's just not my happy time. So I am thinking ahead to when happy times begin again- somewhere around mid March when we see 70 degreese outside again. That being the case, I made a pie. Not pumpkin, not chocolate, not pecan, and not apple, although I am a fan of all of the above. I made a middle of summer, flip flops and swimming pools, lets go berry picking, pie. This is quite possibly the first thing my mom ever taught me to make around the age of 8 and I've loved it ever since.
You will need:
A frozen pie crust- no point in making your own, too much work & they are exactly the same.
Ingredients
-2 1/2 cups strawberries, sliced
- 1 cup sugar
- 1 cup water
- 4 tbsp corn starch
- 3 tbsp strawberry jello powder
- 1 cooked pie crust
- whipped cream
Directions:
- Cook pie crust according to package/recipe
- In saucepan boil sugar, water, and cornstarch
- When thickened, mix in strawberry jello powder
- Fill pie crust with 2 1/2 cups of sliced strawberries
- Pour mixture over top of strawberries.
- Chill for at least 3 hours, overnight is better.
- Top with whipped cream before serving.

-I used a tart pan and it worked beautifully.

-Wanna go even more homemade? Make your own whipped cream!
-I cut my initials out of pie dough to make it my own. This would be a great idea if you're taking the pie to a pot luck or picnic!
