I'm always looking for healthy & delicious recipes that won't hurt our waistlines. Grant is exercising and losing weight like crazy, so I'm just trying to encourage and help his new healthy lifestyle. I found this easy little appetizer on Pinterest that was posted from a blog known as Emily Bites. She's got lots of delicious and healthy recipes on her blog as well!
Zucchini Tots
What you'll need:
-1 cup of shredded zucchini (I used 2 small zucchini)
-1/4 cup of breadcrumbs
-1/4 medium onion, chopped
-1/4 cup parmesan cheese
-1 large egg
-Salt and Pepper to taste
-I added about 2 tsp of my favorite hot sauce as well, just to give it a kick!
~Preheat your oven to 400.
~Spray a 12 cup mini muffin pan with cooking spray.
~Wrap your shredded zucchini in a paper towel and squeeze out any excess moisture.
~In a medium bowl, mix all ingredients until well blended.
~Spoon the mixture evenly into the muffin pan. Be sure to press down the filling into each cup with the back of your spoon.
~Bake for 15-18 minutes or until the tops are beginning to turn golden.
~Run a knife around the outside of each top while still in the muffin pan and they will come our perfectly.
We dipped ours in our favorite Trader Joe's marinara sauce and it was better than any restaurant appetizer you could imagine. However, they are delicious all on their own as well. As I was eating these delicious bites, I also decided that it would make a killer dressing (or stuffing, depending on where you're from) to go on the table at Thanksgiving if made in a small casserole dish.
No matter how you eat them, you'll love them!
