Easy as pie

I bought a bag of lemons about 2 weeks ago and didn't want the last few to go to waste. So I opted for making my Grandjane's lemon pie...also known as Eagle Brand Lemon Pie. This recipe is so easy, my dad even makes it on occasion.

You will need:

3 medium size lemons (1/2 cup of lemon juice)
2 eggs, yolks separated from whites
1 14oz can Eagle Brand condensed milk
1 9inch graham cracker crust






-Drop egg whites into your stand mixer, or a mixing bowl. Set aside.
-Drop egg yolks into regular mixing bowl & get out your wire whisk.
-Whisk your egg yolks until they are creamy looking.
-Mix in the lemon juice slowly while stirring...this prevents the eggs from scrambling.
-Now mix in the condensed milk also while stirring.
-Mix these three ingredients until they combine, then pour into prepared pie crust.
-Chill pie in fridge.

Preheat your oven to 325.

Now for the meringue

-Turn on your hand or stand mixer...on super high speed
-Add your two egg whites and beat the life out of them.
-Add 1/4 tsp cream of tartar (optional)
-Add 2-3 tbsp of sugar (depends on how sweet you want it)
-Keep beating everything until your meringue has stiff peaks.
-Spread meringue over pie filling and make it all purty.

-Place in 325 oven for 9-11 minutes to brown the top.

-Take out of oven and chill for at least an hour or as long as you'd like.
