This recipie is in honor of my sister-in-law, Meghan & her new husband, Chris. They went to Maine on their honeymoon a couple of weeks ago & had the oh so famous Lobster Rolls while they were there. I LOVE lobster rolls, but they cost entirely too much & are difficult to find here in the south. (Hickory Tavern on Mallard Creek Ch. Rd in Charlotte has great ones, but they'll cost you about $15 a pop!) With all of that in mind, I thought, why not make it with shrimp? Much more cost effective & still so yummy! I found this original recipie on http://www.eatskinny.com/ but tweaked it to make it my own...and it's not quite as skinny, but still pretty healthy :)
Chill for about 20 minutes.
Drizzle rolls/buns with extra virgin olive oil & place in oven at 350 for about 6 minutes.
Place shrimp mixture in buns & enjoy!
- 3/4 lb cold cooked shrimp, peeled (weight after peeled)
- 1-2 celery stalks, chopped
- 1 tbsp red onion, chopped
- 2 tbsp light mayonnaise (I used Dukes)
- 1 tbsp fat free Greek yogurt
- salt and fresh ground pepper
- kosher salt
- Cibatta rolls or bratwurst buns
- EVOO
- chopped chives for garnish
Chill for about 20 minutes.
