Don't write this recipie off! Pumpkin & chocolate are amazing together. Don't knock it till you try it. Here's the story:
Pumpkin Chocolate Chip Bars, Better Homes & Gardens Cook Book
You will need:
a 15" x 10" cookie sheet, at least 1" deep (any other size pan WILL NOT work. If too big, they will be dry, if too small, they will not cook through.)
DRY WET
- 2 Cups all purpose flour - 4 eggs
- 2 tsp baking powder - 14.5 oz can of pumpkin (not pie filling!)
- 2 tsp ground cinnamon - 1/2 cup sugar
- 1 tsp baking soda - 1/4 cup oil
- 1 tsp salt - 1 3/4 cup chocolate chips
topping: 3 tbsp sugar, 1 tsp cinnamon
- Preheat oven to 350.
- Mix together all 5 dry ingredients in mixer
- Separately, mix together first 4 wet ingredients
- Slowly, add flour mixture to wet mixture and mix till moistened and smooth
- Add chocolate chips
- Spread evenly on ungreased cookie sheet
- Stir together the 3tbsp of sugar and 1 tsp of cinnamon & sprinkle over top
- Bake at 350 for 25- 30 minutes.
In kindergarten (19 years ago that is) we had a pumpkin tasting day. The wonderful mom's who were able to, made treats made out of pumpkin & brought them to school. We couldn't celebrate halloween at school (darn private school) so instead this event was held one morning in the multi-purpose room. I can still remember it like it was yesterday. My mom made these bars & they were a huge hit. Every October after that, I would beg her to make them for me. Then one day at about the age of 14, I started making them every October for the whole family to enjoy. This is by far my favorite recipie ever & I will make these for my children, then my grandchildren some day.

- Cut into 2x2 in squares. (makes about 30)
- These are great warm, cold, or room temp!!!
