Blackberry Cobbler!

As a wedding gift, a good friend of mine, Beth Gromis gave me a cookbook that I have fallen in love with.
"The Poineer Woman Cooks - Recipies from an accidental country girl" is a homemade cook book by Ree Drummond. She tells the story of each recipie, took all the pictures herself for the entire book, and had it published by a friend! It's so great with many amazing recipies.

If you know me, you know how much I love blackberry cobbler- it's probably my second favorite dessert, my grandjane's chocolate pie being my first :) This recipie is unlike any other cobbler I've ever had. The texture reminds me of a bread pudding, but the top is crunch just like a cobbler. Best part? It only takes 5 ingredients & one bowl.

You'll need:
Kitchen Tools:
-3 qt. baking dish (I used my Le Creuset cast iron pot)
-1 mixing bowl
-Whisk

Ingredients
-1 stick of butter
-1 1/4 cups sugar
-1 cup self-rising flour
-1 cup milk
-2 cups fresh or frozen blackberries

*Preheat the over to 350*

-Grease baking dish (I just used Pam to save a few calories)
-Melt stick of butter in the microwave, 45 seconds
-Whisk flour, 1 cup sugar, and milk in mixing bowl
-Whisk in melted butter
-If fresh, rinse blackberries and dry them. If frozen, no need to thaw or rinse.
-Pour batter in baking dish & sprinkle blackberries on top
-Sprinkle 1/4 cup sugar

Bake for 1 hour or until golden brown & bubbly. After 50 minutes of cook time, sprinkle with 1 tbsp of sugar.

Serve with vanilla ice cream or whipped cream...or both!
